‘’Grape varieties are to wines as cacao beans are to chocolate’’ is a core concept behind the new 100 gram (3.5 oz.) tablet of chocolate made for the Swiss firm Le Carré des Chocolatiers by Vevey-based master chocolate-maker Blaise Poyet.

In other words: don’t expect this chocolate to be Gamaret-filled or flavored—expect it to reflect an analysis of the nose and taste of wine made from Gamaret grapes and to find those properties translated into the right beans for a chocolate that manifests equivalent organoleptic (sensory) properties.

According to the Carré des Chocolatiers press release announcing the just-out tablet, Poyet has ‘’interpreted the tannins, the berries, the cloves and the other spicy notes of the Gamaret in a blend of beans which is its mirror-image.’’
